Yes. Its a salad. This one if full of vibrant colours, antioxidants, B vitamins, copper, zinc and magnesium and a host of other nutrients that will do your body good.
Here's the ingredients
100g of green (or black) lentils.
2 tablespoons of olive or walnut oil.
1 Tablespoon of lemon juice
Zest of 1/2 orange, finely grated
Himalayan salt & black pepper for taste
1 head of chicory red or white, base trimmed and outer leaves discarded.
2 spring onions, trimmed and sliced diagonally
1 tablespoon fresh coriander (chopped)
Seeds of 1/2 pomegranate
50g feta cheese (crumbled)
How to make it
Wash the lentils and soak for 10 mins.
Bring a large pan to the boil, add the lentils and simmer for 15 minutes or until tender.
Drain into a sieve and run under cold water, then toss into a large bowl.
Add the lemon juice, oil, orange zest and plenty of seasoning to the lentils, then leave to cool.
Halve the chicory heads length ways and finely slice. Add the lentils, along with the salad onions, chopped parsley, coriander and half of the pomegranate seeds.
Scatter the remaining pomegranate seeds, feta cheese and parsley on top as a final garnish.
That's it - job done!
